Top Ceviche

Arjun Waney (of Roka and Zuma fame) has done it again, this time bringing some serious Peruvian zeal to Mayfair's bourgeoning dining scene. At Coya, Head Chef is ex-Zaika's Sanjay Dwivedi, who crafts his menu around the flavours of Peru with Asian influences. His open plan kitchens are designed to provide a myriad of cooking techniques - as well as pure theatre: here chefs wield their blades hypnotically befor diners perched at the raw bar, as they slice the freshest cuts, cooks bustle around the sizzling charcoal grill (parrillada) and the blistering Josper grill whilst the glass fronted kitchens reveal all the action behind the scenes. The decor in the dining room is no less dramatic, with a kaleidoscope of Aztec colours and theatrical lighting, set to a swinging soundtrack of South American beats. The lively atmosphere is matched by the glitzy crowd that pack the bar and restaurant for delicious family-style sharing plates. Staff here will steer you through the ample menu, translating dishes as they go: starters are divided into ceviches (diced marinated raw fish), anticuchos (skewers), tiraditos (which are similar to 'new style' sashimi, although thinner cuts and covered in zesty sauces) and a selection of small dishes including salads and grills.
